

Cinnamon Pumpkin Protein Muffins
Muffin Batter:
1/2 c. canned pumpkin (pure pumpkin – not pie filling)
3 scoops unflavored or vanilla flavored NAKED Whey Protein Powder
6 tbsp coconut flour*
2 eggs
1 tsp baking powder
1 tsp baking soda
2 tbs Cinnamon or Pumpkin Pie Spice
1/2 c. water or unflavored almond milk
1/2 c. coconut oil melted
*Other types of flour may be substituted, but I prefer coconut flour due to the high fiber content (2.5 grams/tablespoon). Optional Glaze:
1/2 c. sugar free maple syrup
